Dairy Free Whole Wheat Leftover Pancakes

INGREDIENTS

  • 2 cups whole wheat pastry flour
  • 1/4 cup wheat germ
  • 3 tablespoons soy flour
  • Use a sweetener like Stevia, agave nectar, or brown rice syrup equal to two tablespoons of sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/4 cup canola oil
  • 1/4 teaspoon almond extract
  • 2 cups soy milk (or try chocolate or vanilla almond milk)

DIRECTIONS

  1. Preheat griddle to 350 degrees F (175 degrees C). In a large mixing bowl combine dry ingredients. In another large mixing bowl combine eggs, oil and almond extract; whisk until combined. Stir in soy or almond milk. Add wet ingredients to dry ingredients and whisk until combined. Batter should be slightly thick, adjust liquid if necessary.
  2. Pour batter by the 1/4 cup full onto hot griddle. Cook until edges look dry and bubbles burst. Flip and cook another minute or so until golden brown. Serve warm or cold (or eat for Leftovers)

Exercise:

Do your kids spend too much time playing video games? Here’s an idea: tell them that for every minute that they sit in front of the TV playing their game, they have to spend equal the amount of time using the controller as a jump a rope( If it’s to short, tie two of them together). They will realize pretty soon how hard they really have to work to get to that next level.
